Ingredients


  • 1 lb. Smithfield Smoked Sausage, cut into bite-size rounds1 lb.
  • 1 Tbsp. Olive oil1 Tbsp.
  • 1 lb. Seashell pasta, cooked al dente and rinsed with cold water1 lb.
  • 8 oz. Quality parmesan cheese, diced8 oz.
  • 1 cup(s) Black olives, diced1 cup(s)
  • 1 whole Red bell pepper, diced1 whole
  • 1 whole Green bell pepper, diced1 whole
  • 2 Tbsp. Scallions, diced2 Tbsp.
  • 2 cup(s) Cherry or grape tomatoes, cut in half2 cup(s)
  • 3/4 cup(s) Olive oil3/4 cup(s)
  • 1/4 cup(s) Balsamic vinegar1/4 cup(s)
  • 1 whole Lemon, juiced and zested1 whole
  • 2 Tbsp. Fresh parsley, chopped2 Tbsp.
  • 1/4 cup(s) Fresh oregano, chopped1/4 cup(s)
  • Salt
  • Pepper

Instructions


  1. Heat a saute pan over medium heat. Add olive oil (1 tbsp) and saute smoked sausage until just browned. Also, try grilling for a richer flavor (cut into rounds after you grill). Set aside to cool.

  2. In an extra large mixing bowl place pasta, cheese, olives, peppers, scallions and grape tomatoes.

  3. In a medium mixing bowl, whisk together remaining olive oil, vinegar, lemon juice, lemon zest, parsley, oregano, salt and pepper.

  4. Pour dressing over the vegetable mixture and toss to coat. Fold in the smoked sausage and serve.
