Ingredients

  • 4 Smithfield Bone-In Pork Chops (1-inch thick)4
  • 1/4 cup(s) Oil1/4 cup(s)
  • 1/3 cup(s) Mild and creamy dijon mustard1/3 cup(s)
  • 2 Tbsp. Fresh grated ginger2 Tbsp.
  • 2 Tsp. Soy sauce2 Tsp.
  • 1 cup(s) Cashews1 cup(s)
  • 2 Tsp. Coarsely ground black pepper2 Tsp.

Instructions


  1. In small bowl, combine mustard, ginger and soy sauce; mix well. Combine cashews and pepper in blender or bowl of food processor; process until nuts are finely chopped.

  2. Dip each pork chop in mustard to coat all sides, then dip in cashews. Arrange coated chops in single layer on plate; cover and refrigerate 1 to 8 hours.

  3. Heat oil in large skillet over medium-high heat. Add chops to skillet. Cook 3 minutes, turn and cook additional 3 minutes to sear surface. Continue cooking until internal temperature reaches 150°F, carefully turning chops occasionally.
